Fall Favorites: Crockpot Edition

Well, it’s officially fall in Wisconsin! Taking that extra five minutes to stay wrapped in our cocoon of blankets in bed, sipping on hot coffee as the frost lays across the front lawn, and taking afternoon strolls to enjoy the colors that accompany the brisk air. Now take all of those feelings and think what could be better? How about coming home to the smell of dinner that has been slow roasting all day just waiting for you to dive in? I know, I know, nothing better! So many fall favorites include indulgent comfort food, but that doesn’t have to be the case! Below are some fall inspired dishes that are macro friendly to keep you healthy and feeling that sense of comfort.

Pork Loin Dinner:

2-4 lb pork loin

3-4 sweet potatoes

1 sweet onion

1-1.5 lbs of green beans

1 can of sauerkraut

1 bunch of green onions

1 tbsp of paprika

1 tbsp of garlic

½ c. apple cider vinegar

Layer in cut potatoes, onions, and green beans. Then lay pork across the vegetables. Following the meat, top with garlic, paprika, sauerkraut and finally green onions. Set on low for 6-8 hours.

Chicken Pot Pie Crockpot Edition

4 Chicken Breasts

1 bunch of carrots

2 cups of peas

1 onion

3-4 zucchinis ( for extra veggies)

3 cups of red or yellow potatoes

3 cups of chicken stock

1 tsp of thyme

1 cup of coconut milk

Salt and pepper

Chop and lay all veggies across the bottom of the crock pot. Lay chicken over top of veggies and pour in milk and chicken stock. Top finally with herbs, butter and spices. Cook on low for 4-6 hours!
